Commitment to Safety and Well-Being

We strive to produce beef that we would feel confident serving to our own families and loved ones.

At Hyogo Tanaka Livestock, we began raising cattle using organic feed approximately 20 years ago. Although organic livestock farming had already become increasingly common in Europe by the 1980s, it was slow to gain ground in Japan due to the lack of established systems, limited availability of organic feed, and its high cost.

Nevertheless, driven by our commitment to food safety and our determination to create truly distinctive Kobe Beef, we chose to pursue a fully organic approach to raising our cattle. We have remained dedicated to this philosophy ever since.

One of the defining characteristics of our beef is its delicate fat, which melts at a remarkably low temperature of just 10–14°C. Despite its rich marbling, the beef feels remarkably light on the palate, offering an exceptionally smooth texture and a clean, refined finish.

Commitment to Water and the Natural Environment

At our farms, we use pure groundwater drawn from 250 meters below ground, as well as natural spring water from the surrounding mountains. We regularly conduct water quality testing to ensure that the water remains safe and of consistently high quality.

The Tamba region, where our farms are located, is blessed with exceptional natural conditions, including its climate, landscape, and abundant water resources. These surroundings help minimize stress on the cattle and provide an ideal foundation for raising high-quality beef.

Another distinctive feature of our organic approach is the remarkably low level of odor typically associated with livestock farming. We also provide cattle manure to local farmers, who use it to enrich their soil. The crops grown in that soil ultimately find their way back to us.

We value this sustainable cycle in which people and nature support one another, and we are committed to environmentally responsible livestock farming.

Our Approach to Cattle Care

At Hyogo Tanaka Livestock, we manage the entire process in-house, from breeding through the complete raising process, giving each animal the time, care, and attention it deserves.
Compared with many other farms, we provide more space for each animal, creating an environment where our cattle can move freely and live comfortably.

We also take great care to minimize stress throughout the year. In summer, misting systems help keep the cattle cool, while heaters provide warmth during the colder winter months, allowing us to maintain a comfortable environment in every season.
We pay close attention even to the smallest details, including playing classical music to help create a calm and relaxing environment for the cattle.

We believe that exceptional beef is shaped not only by pedigree, but also by the environment in which the cattle are raised, the methods used to care for them, and the attentive daily care each animal receives.

Pursuing Quality and Sharing Our Beef with the World

Our goal is to produce exceptionally flavorful beef that remains remarkably light on the palate. We continuously pursue the finest quality of fat and the natural umami of the meat itself.

Today, Japanese Kobe Beef enjoys an outstanding reputation around the world. Its delicate marbling, distinctive umami, and rigorous quality control have earned the admiration of discerning diners worldwide, and it is served at many leading restaurants.

Our premium beef, produced with a strong commitment to organic farming, is currently exported to approximately five countries, including the United States, France, and countries across Southeast Asia. We use air freight exclusively so that our beef can reach customers around the world as quickly as possible. All meat is processed in accordance with the latest food safety and hygiene standards in Japan. In early 2026, we also participated in an event in Europe as part of our continuing efforts to share truly exceptional organic beef from Japan with the world.
